This meal is quick, easy, and delicious! Three of my favorite things.

EVERY ingredient here is from Aldi!

This is one of Brandon’s favorite meals, he likes all my food but he usually has double portions whenever I make this!

I meal plan 90% of our meals during the week, so every morning before I leave for work I take the meat out of the freezer and toss it in fridge. By the time I get home from work the shrimp is easy to peel after running some cold water over it and we are good to start cooking!

I do 80% of our shopping at Aldi. If it’s not at Aldi or Sam’s club, I probably haven’t experienced it yet. Here’s the recipe and details friends!

Peel shrimp, set aside

Whisk together the oil, parmesan, garlic, brown sugar, soy sauce, onion, and red pepper flakes

I got this veggie chopper on Amazon and boy does it save some time! Seriously it was the best 12.99 I’ve spent on Amazon in awhile.

Seriously this chopper is a life saver….and time saver…Next toss the shrimp in with marinade. Toss in the fridge. This is the perfect time to run to the gym, throw in a load of laundry, fold some laundry, catch up on TV. I usually let it marinade for about 30-60 minutes.

Cook the pasta according to the package directions. Not uploading any pics of that step because if you can’t boil pasta then I can’t help you! I like to side this dish with some sort of green veggie, we had broccoli in the fridge so while the pasta was cooking I chopped up broccoli. Toss some avocado oil over it, with some salt and pepper! Set in the oven at 400 for 20-25 minutes. I like my broccoli more soft, so we go with more like 23ish!

Use a large skillet to get ready to cook the shrimp and marinade. I don’t even let my skillet heat up, i just dump the shrimp marinade into the skillet and turn it on medium heat. The shrimp only needs to cook for 5 minutes, or until slightly pink!

Stir in the past and gently toss to combine. I like topping my food with dried parsley, but totally not necessary. Sprinkle the cheese over the top of the pasta. Toss to combine.

Disclaimer: This is vegan cheese so it doesn’t’ melt completely ever. So this is my finished product!

Dinner is served! I like to pack my lunch as we’re making our plates. Brandon doesn’t usually take a lunch to work, he just eats usually double at dinner. Remember its portion control too!

Spicy Shrimp Pasta

Spicy Shrimp Pasta
• 1 bag of medium shrimp
• 2 Tablespoons of Minced Garlic
• 1/4 Cup on Onion
• 2 tsp Soy Sauce
• 8oz Penne
• 1 Tablespoon of Brown Sugar
• 1/3 cup Olive oil/Avocado Oil
• 1/4 cup Parmesan/mozzarella cheese
• 1 tsp Red Pepper Flakes
Salt and pepper to taste.

Directions
1. Peel shrimp, set aside
2. In a medium bowl whisk together the oil, parmesan, garlic, brown sugar, soy sauce, onion, and red pepper flakes. Add peeled shrimp to the bowl. Toss so that the oil mixture is well coated over the shrimp. Set in fridge to marinate for at least 30 minutes, but marinate as long as you want!
3. Cook Pasta according to directions, drain well and set aside
4. Heat a large skillet over medium heat. Add shrimp and sauce mixture and cook, stirring occasionally until the shrimp and onions are done.
5. Stir in pasta and gently toss to combine.
6. Serve immediately.
