This was a new recipe for us at my house. Overall I would rate it as pretty good! It was my first time using artichokes to cook with and we both thought it was a quick delicious nutritious meal! Check out the details below!

All the ingredients were brought from Aldi! Not pictured is the chicken breast. I buy our chicken breasts from Sams Club and actually I cut each breast in half and freeze four in a baggie for meals throughout the week!

Lay the chicken flat in the bottom of a pyrex/cookie sheet. Spray with cooking spray Season to your liking! I used pepper, garlic salt, oregano, and parsley!

Open the canned tomatoes and drain.

Open the artichokes and drain!

Layer the seasoned chicken with spinach

Then add the drained tomatoes

Then add the artichokes!

Top with cheese

Cook for 20 minutes. Then cover loosely with aluminum foil the last 25 minutes of baking.

Serve with your choice of sides and enjoy !

Tuscan Garlic Chicken

Tuscan Garlic Chicken • 4 chicken breasts
• 2 Tablespoons of Minced Garlic
• 1.5 cups spinach
• 1 can artichoke hearts, drained and chopped
• 1 jar canned tomatoes
• 1 cup mozzarella cheese
• Seasonings to your liking (I used garlic salt, oregano, pepper, and parsley


Directions
1. Preheat oven to 375F
2. Lay the chicken flat in the bottom of a large casserole dish.Spray with cooking spray and Season to your liking (I used garlic salt, oregano, pepper, and parsley
3. Drain the canned tomatoes and set aside
4. Drain the artichokes and gently pull/chop them to a size of your liking.
5. Layer the chicken with the garlic
6. Layer the chicken with the spinach
7. Layer the chicken with the tomatoes
8. Layer the chicken with the artichokes
9. Layer the chicken with the mozzarella cheese!
10. Cook for 20 minutes. After 20 minutes cover loosely with foil for an additional 25 minutes.
11. Carefully remove from oven and enjoy with your choice of side! Enjoy this quick and easy delicious meal!
